This is my Moms recipe and it is by far my favorite! It is also a crowd favorite, I get lots of compliments when I make it for a meal train or a party! It’s super simple and you can even use leftover protein! For this day I subbed out the Chicken and used leftover smoked pork!

Enchiladas
Ingredients
- Chicken (Rotisserie to make it easy or sub any protein)
- 1 Can Refried Beans
- 2 10 oz Cans of Red Enchilada Sauce OR 1 Large Can
- 2 Cups Shredded Cheddar
- 8-10 Flour Tortillas (Sub GF or Corn if needed)
Directions:
- Preheat oven to 375 Degrees Fahrenheit
- Shred Chicken or Cook protein of your choice and set aside
- Pour 2/3 Can of sauce in bottom of a 9×13 pan. This helps the enchiladas from sticking to the bottom of the pan.
- Take a flour tortilla (or GF if needed) and spread 1-2 TB of Refried beans inside the tortilla, add some protein, then add 1-2 tsp of shredded cheese and roll tortilla. Place in pan.
- Continue step 4 until the pan is full of tortillas.
- Pour the rest of the sauce over top of the tortillas in the pan and add the remaining cheese to the top
- Bake at 375 degrees Fahrenheit for 35-45 minutes
- Serve with tortilla chips, rice, sour cream, guacamole, or any other topping!
