Sweet Potato Thai Curry Quinoa

Quinoa is not my favorite thing to cook with because it really is tasteless but pair it with some Thai flavors and this healthy grain will have you wanting more!

The sweetness of the sweet potato plus the spicy Thai curry paste is a the perfect sweet and spicy duo in this nutritious protein forward dish!

Ingredients
  • 1 Sweet Potato, diced
  • 1/2 large onion diced
  • 1 Cup Quinoa
  • 2 TB Red Thai Curry Paste
  • 1 Cup of Chicken Broth
  • 2 Large Chicken Breast
  • 2 Tb Soy Sauce (Sub with Tamari to make it GF)
  • 1 TB minced Garlic
  • Salt
  • Pepper
  • 1 Can Coconut Cream/Milk
  • 1 TB Sugar
  • 1 TB Sambal (I added 3 TB to make it extra spicy)
Directions
  1. Dice Sweet Potato and Onion and add to crock pot
  2. Add Quinoa, Curry Paste, Chicken Broth, Chicken Soy Sauce (Tamari), Garlic, Salt, Pepper to Crock pot and let it cook for 6 hours on low
  3. After its done cooking shreds chicken in the pot and add Coconut Cream, Sugar, Sambal
  4. Serve and enjoy! Top with sriracha mayo, cilantro, and or lime!
