These Chicken Tenders are a family favorite! They don’t require a deep fryer yet still pack that protein in as well as a mouth watering crunch!
They are also completely gluten free by mixing corn flakes and almonds together to make the breading! Dip them in your favorite sauce and everyone in the family will be happy!

Almond Crusted Chicken Tenders
Ingredients:
- 2lbs of Chicken Breast cut into Tenders OR 2lbs of Tenders skinless boneless
- 2 Cups of corn flakes
- 1 Cup slivered almonds
- 1 Cup parmesan cheese
- Salt
- 2 Eggs for wash
Directions:
- Heat oven to 400 Degrees
- If you are using chicken breast, cut into long tender strips. If you bought tenders skip this step
- In a food processor or blender, blend cornflakes, parmesan cheese, almonds, and salt until fine. Pour onto a plate and set aside
- Next, scramble 2 eggs together in a bowl and set aside.
- Make an assembly line of chicken, egg wash, breading, and a greased sheet pan.
- Dip the chicken tender in the egg wash, then roll it in the breading until it is coated everywhere, then place on the pan. Repeat this until all tenders are coated.
- Spray tops of chicken with avocado oil or lightly brush oil on top of chicken. Bake for 18 minutes.
- After 18 minutes, turn oven on broil and bake for another 4-5 minutes or until tops of chicken are nice and brown but not burnt. Make sure to keep an eye on the chicken during this step so it does not burn.
- Serve with your favorite sides and dipping sauces!
