Cheesy Sausage Egg Casserole
Ingredients:
- 9 Eggs, scrambled
- 1lb of Sausage, cooked
- 1lb or 20oz of shredded potatoes, simply shredded brand
- 1 Cup Cottage Cheese
- 1 Cup Shredded Cheddar Cheese
- 2-3TB Milk
- Salt
- Pepper
Directions:
- Preheat oven to 375 degrees Fahrenheit
- Cook ground sausage in a pan and set aside
- Grease a 9×13 pan and then pour Simply Shredded Potatoes (or any other brand of your choice) in the bottom.
- Place 1 cup of cottage cheese on top of the potatoes and stir together.
- Next, Pour the cooked sausage over top.
- In a separate bowl, crack and scramble 9 eggs with milk. Pour mixture over top of potatoes and sausage. Set aside.
- Shred 1 cup of shredded cheddar and place on top of egg mixture.
- Bake for 45 minutes or until eggs are cooked through in the center. Cut into 9 pieces!
- Serve with salsa or hot sauce!
