Frosted Sprinkle Donuts

Growing up I can remember headed to the donut shop on Saturday mornings with my Dad. Stepping into the shop with a glass case staring back at me of frosting, sprinkles, and a glistening glaze was every young Childs dream. Having to choose was always the hardest choice! Having a child with ADHD, I do my best to recreate the nostalgia even with some dietary limitations!

This weekend I took on the task of making donuts for the family that were healthier on the gut than a donut you might find at the store by using Einkorn flour. As someone with a gluten sensitivity, I was really hoping this flour would allow me to partake in the fun of a donut Saturday! Unfortunately for me, it didn’t. However, some people with gluten sensitivity have no issues digesting Einkorn flour! Do not try with celiac disease!

I also chose to use sprinkles that a naturally colored rather than artificial coloring. For one of my children I don’t notice a large difference in their behaviors and body when eating artificial dye, but with my child with ADHD I do.

These couple of alternatives made Saturday Donuts friendly for all of us! And super enjoyable!

Frosted Sprinkle Donut Recipe

Ingredients

  • 1 Cup Flour (I used Einkorn but you cold sub with 1 for 1 GF or regular flour)
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • 1/3 Cup Brown Sugar
  • 1/4 Cup Milk
  • 1/4 Cup Greek Yogurt
  • 1 Egg
  • 2 TB Butter melted
  • 1.5 tsp Vanilla
  • 3 TB Sprinkles (to add to batter)

For Forsting

  • 1 Cup Powder Sugar
  • 1 tsp Vanilla
  • 1-2 TB milk (until consistency you like)
  1. Mix the dry ingredients, flour, baking soda, baking powder, cinnamon together in a bowl and set aside
  2. With a standing mixer, mix brown sugar, milk, greek yogurt, egg, and butter until creamy
  3. Add dry ingredients to wet ingredients and mix until combined but do not over-mix. Fold in sprinkles to the batter
  4. Put batter a piping bag OR in a gallon zip lock bag and cut the tip of the corner off. Pipe batter into greased donut pan.
  5. Bake at 350 for 9-12 minutes. Check center of donut.
  6. Pull donuts out of the oven when center is cooked. Let cool completely then frost the top and add sprinkles
