Life is all about easy! What can I throw together before I leave the house in the morning and come home and have to do very little with? This dinner will be on your rotation with that criteria! An easy marinated chicken you throw together in the morning and grill when you get home! Plus a super simple cucumber salad to pair with it! All in all takes about 10 minutes to prep in the morning and 20 minutes when you get home!

Garlic Soy Chicken Thighs
Ingredients:
For Chicken:
- 1/2 Cup Soy Sauce (Use Tamari for a Gluten Free Option)
- 1 TB Hoisin sauce (Use a GF Hoisin for a GF option)
- 1 TB Honey
- 2 TB Garlic
For Cucumber Salad:
- 1-2 English Cucumbers, sliced thin
- 1/4 Onion sliced thin
- 1-2 TB Soy Sauce (Use Tamari for GF Option)
- 1-2 tsp Sugar
- 1 TB Rice Vinegar or Distilled Vinegar
Directions:
- In the morning combine marinade (Soy/Tamari, Hoisin, Garlic, Honey) and stir together. Pour over Chicken thighs and set in fridge to marinate for at least an hour (All day is best).
- In the evening, take your cucumber and slice thinly. Place in a bow.
- Pour Soy/Tamari, Sugar, Vinegar, and onion on top and stir together. Set aside.
- Next, start grill and let it heat up (see notes if you don’t have a grill).
- Grill Chicken thighs 7ish minutes on each side until internal temp reaches 165 degrees Fahrenheit.
- Serve with rice and cucumber salad!
** If you do not have a grill you can still make this chicken in a cast iron pan stovetop! OR bake in an oven at 400 degrees Fahrenheit for approximately 17 minutes or until internal temp reaches 165 degrees Fahrenheit.
