Leftover Pork Nachos

This past weekend we smoked a giant pork butt for friends and had wonderful BBQ Pork Sandwiches. The next day, it just didn’t sound as appetizing! So what can you do differently with a large batch of meat instead of eating the same thing over and over again?

Nachos is always our go to! It’s easy, it’s cheap, and you can use so many other leftover ingredients in your fridge or pantry!

Pork Nachos

Ingredients
  • Leftover Smoked Pork (Or other cooked meat like ground beef, chicken, etc)
  • Tortilla Chips
  • 1/2 Onion Chopped
  • 1/2 Can Black Beans (or pinto)
  • 1 Cup Shredded Cheddar cheese
  • Cilantro
  • Drizzles of Taco Sauce
  • Drizzle of Queso
  • Lime
Directions:
  1. Heat oven to 375 degrees
  2. Place chips on a pan and top with leftover pork, onion, black beans, and cheese
  3. Place in oven for 8-10 minutes or until cheese is well melted
  4. Top with cilantro, drizzle with taco sauce, drizzle with queso and squeeze a little fresh lime juice
