Marry Me Pork with Swiss Cheese

If you are looking to impress, this is your dinner! While it only takes thirty minutes, the flavors make it seem like you have been cooking all day. Legend has it, it can even guarantee a marriage proposal! (I can’t testify to that part but it had to get its name from somewhere!)

While Marry Me Chicken is the original recipe, you can sub it out for pork chops! I like to get a giant pork loin at Costco for around $15-18 and slice into chops. I used 5 for this recipe. You can also make this gluten free by using gluten free flour. Super simple swaps.

The original recipe calls for parmesan cheese but I didn’t have that, so I shredded some Swiss cheese and topped the pork chops at the end to get a nice broiled cheese topping! This meal smelled absolutely delicious and tasted even better.

Marry Me Pork with Swiss

Ingredients:
  • 2-5 Pork Chops
  • 1/2 Cup Flour (Sub Gluten Free Flour for GF Option)
  • 1-2 TB Dried Herbs
  • 1 TB Salt
  • 1 tsp Pepper
  • 3 TB Butter
  • 2 TB Garlic minced
  • 2 Stems Rosemary
  • 1 Jar Sun-dried Tomatoes (Drain oil)
  • 1 Cup Chicken Stock or Broth
  • 1 Cup Coconut Cream (Sub Heavy Cream if Needed)
  • 1 Cup Shredded Swiss Cheese
Directions
  1. Set oven to broil
  2. Make breading by combining flour, 1 TB of dried herbs, salt and pepper.
  3. Dredge Pork Chop in flour mixture and set aside.
  4. Heat cast iron skillet. Add 1 TB of butter to skillet and pork. Brown each side from 3-4 minutes and then set aside.
  5. Add 2 TB of butter to hot pan and minced garlic. Let it cook for roughly 30 seconds then add chicken stock. Stir around to get brown pieces off bottom of pan. Next add sun-dried tomatoes.
  6. Add Coconut Cream and another TB of dried herbs, salt, and dash of pepper. Stir. If available set stems of rosemary in pan for flavor.
  7. Add pork chops back to pan in sauce and let them simmer for 5 minutes. Flip over.
  8. Once flipped add shredded Swiss cheese to the top. Place pan under the broiler for 4-5 minutes. Internal temp of pork chop should reach at least 145 degrees Fahrenheit.
  9. Once done, serve with any side dish you would like! Enjoy!
