Sausage Potato Breakfast Burrito

These are my husband’s favorite grab and go breakfast! They are hearty and so easy to grab out of the fridge, heat up, and either enjoy at home or take for in the car on the way to work or school!

I used shredded potato this time to pack the burritos with a little my heartiness. My husband loves to drizzle some hot sauce over the top and it’s the perfect punch of salty and spicy, a great combo to start the day!

These are not gluten free, but you could make them that way by using corn tortillas, Bfree tortillas, or the Siete Cassava/Almond flour tortillas!

Sausage Potato Breakfast Burrito

Ingredients:
  • 6 Flour Tortillas (GF option: use corn, Cassava, or BFree)
  • 1 Cup cooke ground sausage
  • 6 Flour tortillas
  • 5 Eggs
  • 2 Cups shredded potatoes (1 bag simply shredded potatoes)
  • 1 Cup shredded cheese
  • Hot sauce
Directions:
  1. Cook ground sausage and set 1 cup aside
  2. In the same pan Cook shredded potatoes for 7-8 minutes. Use 1 TB of butter if needed to crisp the potatoes. Set aside when done
  3. Scramble 5 eggs with a teaspoon of water and cook until done.
  4. Assemble the burritos by laying out a flour tortilla. Then top with potatoes, eggs, 1-2 TB sausage, cheese.
  5. Roll into a burrito and roll in foil to save in the fridge. Good in the fridge for a week or freeze for 2-3 months.
